Nicaraguan Medium Roast Shade Grown Coffee. Fruity, nutty and chocolaty with hints of mango, plum and cranberry. This coffee is produced in the region of Matagalpa, Nicaragua. The coffee company has personally visited these farms in Nicaragua to choose the beans from which they have created this balanced medium roast. This coffee is from the sustainable model farms of the Aranjuez Valley Coffee Growers' Cooperative. It is grown at an altitude of 1,400 meters in the shade of orange, mango, mahogany, rosewood and inga trees. This rich environment produces an exceptional bean with a sweet and fruity flavor, and a full herbal finish. We have personally visited these farms in Nicaraguan to choose from which we have created this medium roast. |

Vienna Roast Shade Grown Coffee. The roasting temperature for this Vienna Roast falls between a medium roast and a French roast. They take the beans out of the roaster when the oils are just about ready to vaporize. Coffee is 19 to 20 percent oil by weight. At about 460 degrees Fahrenheit it vaporizes inside the cell structure and, under great pressure, squeezes out of the cells to the surface of the bean. A perfect Vienna Roast is slightly shiny and more brown than black, the color of dark chocolate. Great Vienna roast flavor has a hint of cashews, a vinous tang, and an intense, savory finish. It is a great coffee for Irish coffee because it is fantastic with heavy cream. This coffee is a blend from Rwanda, Brazil, and Sumatra to produce this roast. |
